I made Tofurkey for Christmas eve supper, and of course, I have a ton of leftovers. Here are a few ideas I found for getting rid if it:

My two personal favorites:

Tofurkey chopped salad with cranberries, celery, carrots, and pomegranite seeds. Top with a vegan mayo.

Tofurkey sandwiches on a really grainy / nutty bread with cranberry sauce and greens.

I made this homemade sauce for Thanksgiving, and so far, I want to put it on almost everything! I used a 2:1 ratio of cranberries to pomegranate seeds, a little water, a bit of good quality vanilla, and agave nectar to taste. I boiled it down for ten minutes, and it set pretty nicely as it cooled. The pomegranate seeds go really well with the cranberries. They don’t compete with the flavor but instead add a subtle complexity.

This sauce is a really great alternative to canned cranberry sauce. Cranberries are naturally healthy (I used organic ones), and the agave nectar keeps the glysemic index low. Pomegranates are another super food that protect against heart disease and maybe even cancer.
