I did a little experimenting with vegan bakalva, and it’s quite easy to make. I layered fillo dough (brushed with melted Earth Balance margarine) and ground up nuts (almonds and walnuts seasoned with a little cinnamon and nutmeg). Baked at 350 for around 30 or 40 minutes, and then I poured a simple syrup over it. Next time, I am going to try to use agave instead.

Fillo dough is surprisingly easy to work with – especially if you keep the dough covered with a damp towel!
